Thanksgiving leftovers reconstructed


Here's another great meal you can make with your turkey leftovers. Turquedilla- it's a Mediterranean take on an old favorite. Here's how to make it:

Ingredients:
Tortilla
Sun dried tomatoes
Mozzarella Cheese
Parmesan Cheese
Chopped Onion
Minced Garlic
Fresh Spinach
Prego Pesto Sauce
Spices: Butter, pepper, and ground red pepper (optional)

Directions:
In small pan caramelize onions and garlic in butter. Once onions get slightly clear add a handful of spinach, stir until the spinach begins to wilt.

In large fry pan melt a small pat of butter. Place tortilla in pan, spread on a thin layer of pesto. Sprinkle with chopped turkey, mozzarella and parmesan cheese. Add spinach mixture. Add a dash of pepper and red pepper and sun dried tomatoes. Cook on medium heat until cheese melts and tortilla browns.
